Curcumin powder is extracted from the root of turmeric, biologically called curcuma longa. Curcumin is orange yellow crystal powder with bitter taste and characteristic odor. Its molecular formula is C21H20O6 and CAS number is 458-37-7. Curcumin is one of the most important substances in turmeric, which contain several compounds, including curcumin, demthoxycurcumin, bisdemethoxycurcumin and so on.
Depending on the solvents used for extracting, curcumin has different solubility. Curcuminoids 95% (curcumin content 70%-80%), extracted with organic solvents, are liposoluble. Curcumin 10% extracted with water is water soluble.
